Zucchini and Chickpea Patties

Ingredients:
1 15.5 oz can chickpeas, drained & rinsed then mashed or blended until smooth
1 1/3 cup rolled oats (optional to finely grate in a blender/food processor)
1 zucchini, grated
1/2 red onion, grated
1 egg, lightly whisked
1/2 teaspoon salt
Olive oil

For serving:
Greek yogurt
Toasted tortillas or toasted pita
Lettuce

Makes 8 patties

-Mix the chickpeas, oats, zucchini, onion, egg, and salt
-Heat olive oil in a pan
-Make patties 3 1/2 inch diameter and 1/4 inch thick
-Saute over medium-high heat until golden on both sides
-Serve with toasted pita/tortilla, Greek yogurt, and lettuce
